Unlike other citrus fruits, which tend to grow best in warm coastal areas, yuzu thrives in cooler, more mountainous regions. With more than 80 percent of Kochi Prefecture covered in forests, it is an ideal environment for growing yuzu. Starting in the 1960s, Kochi decided to cut back on logging and instead focus on the more environmentally friendly cultivation of yuzu. Today, many mountain slopes are covered with yuzu groves, and the region has become the largest producer of citrus in the country.
