Leng Xiang Tie Guan Yin is harvested at the end of October, and its cool character is not only thanks to its name but primarily thanks to the low level of oxidation. The tea grows in the pure environment of the Anxi mountain range in the Fujian province, and in its qualities is strongly reminiscent of Taiwanese Oolongs. It is no coincidence that the Fujian province neighbours Taiwan. Tea has been cultivated in the Anxi region for centuries, production began during the reign of the Ming dynasty (1368-1644). Oolongs form Anxi are generally known for their honey-floral aroma and long lasting “aftertaste”. The colour of the infusion is on the boundary between jade green and golden yellow. 

Notice the evenness of the tea granules and the relatively large number of dark leaves, according to which we can judge a well processed harvest with reference to the selection of leaves and degree of oxidation. Too short oxidation would mean a lack of homogeneity and insufficiently full flavour, as well as a lack of “aftertaste”. It would produce a lighter coloured tea, with a distinctive aroma but lacking in taste.
