This tea is based on Zheng Cong Tieguanyin cultivar of Camellia sinensis. Tea leaves come from Long Juan tea garden in Anxi which is quite new but possesses a very clean and potent soil excellent for tea growing. The processing of this baked Tie Guan Yin tea is complex and requires expertise. It takes 3 hours to get from the fresh-scent type to the roasted type by baking it slowly over charcoal fire (100℃). By following this method the resulting liquor is clear, golden yellow with some light red hues. A hint of flower sweetness and baked notes can be recognizable in the first brew. The 2nd brew is very clear and the baked notes become more distinct. The 3rd brew tends to be more floral with a decent mellow aftertaste. All subsequent brews can still make a very interesting pallete in your mouth and throat. Tasting of Tie Guan Yin tea is a journey which will always take you to a slightly different place.
