Shui Xian, often spelled as Shui Hsien, which literally means Water Sprite (Water Fairy) or Narcissus. The traditional making process of Shui Xian Oolong is very complicated, and the most sensitive is baking, which defines a final taste and quality of this tea. Our Shui Xian Oolong Tea uses the traditional baking process, which is to place the tea in a bamboo baking cage, using the heat generated by burning charcoal, to bake the tea leaves for a long time. This tea belongs to medium-baked tea, so the dry leaves have relatively deep color with obvious roasted aroma and honey tones.
Wuyi Shui Xian tea bush is believed to originate in Jing Yang City (South Wuyi, originally called Shui Jie County). The mother bush was found in Zhu Xian cave, pronounced “Shui Xian” by Fujian’s local people. Also it is belived that the place from where the original bushes came from was Phoenix Mountain in Guangdong province. Like Rou Gui, Shui Xian bushes are very resilient to temperatures and easy to grow, making it an ideal bush for producing larger quantities of tea. The leaves are also very large compared to other bushes. Shui Xian and Rou Gui are the most predominant bushes that are grown in this region. Shui Xian is also added to many other types of Wuyi tea blends because of the strong flavor and aroma.
