One of the best known Chinese teas, which originated beyond the gates of the Ling Yuan temple, and whose name can be translated as “spring green river snail”, it is known for its distinctive fruity aroma. A sensitive nose is capable of distinguishing the scents of peach, plums, loquat and orange. It is unusual for the early harvest of this tea, which begins on the day of the spring equinox. At this time relatively small leaves are gathered, and a larger number must be harvested for the required quantity of tea. Young buds and the first leaf are gathered and subsequently thermally treated and coiled into spirals.
